We all got used to the idea that any type of veggies, fresh or moderately cooked, are very valuable foods which provide us with a wide variety of benefits and do not cause weight gain. However, it turned out that there can be certain drawbacks and negative effects of eating stewed vegetables. In particular, not long ago the results of a study were published, suggesting that eating stewed and roasted veggies is linked to dental plague formation.
A group of scientists from Scotland carried out a series of experiments which showed that eating fried, roasted or stewed veggies, which were cooked for more than 45 minutes, can affect out dental health, cause dental plague formation and increase our chances to lose our teeth. This properties are attributed to a high content of certain acids in fried and stewed veggies. The studies confirmed that the most of these dangerous acids can be found in stewed eggplants and squashes, as well as in boiled paprika and green belly pepper, and stewed tomatoes and onions proved to be the least harmful.
According to one of the research leaders, Dr. G. Chadwick of the School of Dentistry, the acidity of some meals prepared with stewed or roasted vegetables can be compared to the one of carbonated drinks. I don’t know about you, but for me its quite hard to believe! Anyway, the findings of the study were published several years ago in European Journal of Prosthodontics and Restorative Dentistry. After learning about this, what I can say for sure is: eat lots of FRESH veggies and fruit to enjoy full benefits of these natural superfoods and live a long happy life!
